Apricot pie recipe

Summer will soon be here, as will the fruits that accompany it. The apricot for example is rich in minerals and vitamins, to be enjoyed on the most beautiful of days. Among others, its properties are beneficial for the skin and eyes. There are different ways to cook it, including a pie for dessert. Why not share a moment cooking with family or simply enjoy trying it with friends, courtesy of our recipe for the celebrated apricot pie!

Ingredients

  • 380 g flour
  • 1/4 teaspoon baking powder
  • 70 g caster sugar
  • 250 g cold butter
  • 60 ml of water
  • 80 g of ground almonds
  • 800 g apricots

Étapes

1 Pastry

First, mix the flour, sugar and yeast, in the mixer or by hand.

Then add the butter in pieces. Once the mix has the texture of sand, add the water and mix until you have a uniform dough.

Place in the fridge for 30 minutes minimum.

Once the time is up, roll out the dough and sprinkle with almond powder.

2 Fruits

Pit the apricots with a N° 07 chestnut knife.

Cut them into slices and add them, in arrangement or randomly, onto the dough. Sprinkle with sugar.

Fold the dough over the fruit towards the centre.

Finally, brush the edges of the dough with egg white and sprinkle with powdered sugar.

Bake at 180° C for 40 minutes.

3 Tasting

You can enjoy it as a treat or for dessert!


Foodies tip

The pie can be made with other fruits such as plums, peaches, pears, apples and sprinkled with red fruits, pistachios and chopped almonds or roasted hazelnuts. So you can make it in any season!
