The blade is certified for food contact. Nevertheless, it remains a high-carbon steel blade that should not be used with acidic foods.

Technical specifications

8.5 cm

The 8.5 cm "brut de forge" blade is forged from high-carbon steel. This gives it excellent cutting quality and easy sharpening. It is ground only on the lower part, leaving a hammered appearance on the upper part.

Ebony is a rare and luxurious wood from the forests of Africa. A dense, deep black wood, ebony is traditionally used in cabinet making and marquetry. The handle of the N°08 Forge is oiled and cut with irregular facets.

Virobloc made in stainless steel with a specific black treatment which improves the protection against the corrosion. This treatment is scratch-sensitive, be careful not to use abrasive products or abrasive sponges when cleaning.
